Frijoles Puercos

1 lb. pto Beans
16 oz. can Rosarito Beans, optional
¾ Your Pot of Water
½ lb Pork Chorizo
4 slices American Cheese
6-8 slices Bacon, cooked and crumbled
2 Tblsp. Butter
6 slices Jalapenos, no seeds
Salt, to taste


Bring water to a boil. Clean beans, removing peels and rocks. Soak in hot water. When water is boiling drain and add to pot, simmer. Approximately like 1 1/2 - 2 hours, add salt to taste. Or simply buy a 16 oz. can of refried Rosarita beans. Heat up pan, add butter to melt, add chorizo, crumble and cook for 3 minutes, add bacon, add beans, (from scratch, once you drained them you can either blend them or smash them to refried them, or use the option, open can and pour over the melted butter). Simmer and add jalapeno. Once everything is well mix add the cheese, stir unti it melts in the beans. Serve as a side dish or appetizer topping with tortillas chips.
