The smoky grill flavor and caramelized sweetness of the beets blends beautifully with just a simple balsamic dressing.
Preheat gas grill for high heat. Lay out four sheets of foil 10 x 14 inches in size. Spray shiny side of foil with nonstick spray. Place 4 beets on each piece of foil and wrap foil around beets to make a flat packet. Place packet on grill and cook 30 minutes, turning once or until beets are very tender. Allow beets to cool 15 minutes. Using rubber gloves, slip skins off beets, using a small paring knife to trim tops and root ends. Quarter beets and place a serving bowl. Drizzle with olive oil, balsamic vinegar, salt and pepper. Serve warm.
