A cool and refreshing make-ahead desset with lemon gelatin, pineapple, a creamy dressing and cheddar cheese.
Drain pinapple into a measuring cup. Prepare gelatin according to directions, except use reserved pineapple juice for part of the water. Pour pineapple in unset gelatin and refrigerate overnight. Whip whipping cream, adding sugar and mayonnaise. When whipped, spread over set gelatin and then sprinkle cheddar cheese on top.

Notes from the Cook: I know this sounds like a strange recipe, but the flavors mix very well together. It has been a must have at family dinners for years and years. Best made in a rectangular glass dish.
