Why visit a restaurant when you can make delicious, authentic fajitas at home?

Ingredients:

Directions:

Mix mojo, 1/4 cup cilantro, cumin and juice from 2 limes. Place steak in a one gallon resealable bag and pour mixture over steak. Refrigerate for 4 hours flipping bag every hour or so. Preheat grill to 425-450 degrees. Place an iron skillet on grill top, and when sizzling hot, add strips of onion, green and red bell peppers. Sprinkle on remaining cumin then saute until onions and peppers are tender. Remove skillet from grill and squeeze on juice from remaining lime. Remove steak from marinade and place on hot grill top. Cook 7 minutes per side, for rare, then remove and let rest 5 minutes. Slice steak at an angle across the grain. While steak is cooking, warm tortillas wrapped in foil in a 300 degree oven for 10 minutes or until warm. Serve fajitas and fixings buffet style. To assemble fajitas layer tortillas with steak, cheese, onions, peppers, salsa, gaucamole and sour cream.

Notes from the Cook: You can make your own gaucamole by mashing 1 avocado, fresh lime juice, chopped green onions, a dab of sour cream and stir. Also, you can make fresh salsa by processing 1 large tomato in food processor with 1 medium onion, 1 clove garlic, 1/4 cup cilantro, then pulse until just blended.
