A thick steak of beef top round is marinated in a mixture of mango chutney with wine and chopped nopalitos, then grilled.

Combine nopalitos, chutney, wine and oil in a large bowl; stir well. Pour about half of this marinade into a large resealable plastic bag. Score steak with shallow diagonal cuts, making diamond shapes. Place steak in bag with marinade. Seal bag and turn to coat. Refrigerate 6-8 hours, turning occasionally. Cover and refrigerate remaining marinade. Coat grill rack with cooking spray before starting grill for indirect heat. Drain marinade from beef and discard. Grill steak, covered, over direct medium-high heat, for 6-8 minutes or until browned, turning once. Place steak over indirect heat and continue grilling, basting occasionally with remaining marinade, for 25-30 minutes or until steak reaches desired doneness.

Notes from the Cook: Nopalitos and Mango Chutney Steak is delicious when sliced and served with baked potatoes and green salad. Nopalitos are easy to find in most super markets and add a mild note of "heat" that makes this steak especially tasty.
