Ricotta cheese, smoked almonds, green onion, mushrooms and the perfect seasonings create the stuffing for these hearty pork chops.
Preheat oven to 400 degrees. Drizzle olive oil in a frying pan and add butter. Saute green onions and mushrooms just until mushrooms are cooked. Place onions and mushrooms in a small bowl, add remaining ingredients, and mix thoroughly. Cut a pocket in each pork chop and stuff with mixture leaving enough room so pocket can still be closed. Place pork chops on a greased wire rack then place rack on a baking sheet. Bake about 50 minutes.
