This recipe calls for salted cod and is prepared with red, green and yellow bell peppers. The Marsala and garlic flavor the dish perfectly.
Soak fish overnight. Rinse and add fresh water, boil fish 15-20 minutes, and rinse once more. Set fish aside and slice peppers and onions very fine. Heat olive oil in a large pan, and saute onions and peppers for 5 minutes. Mince garlic and add to pan with bay leaves. Add fish to pan, shredding with hands, and incorporate with remaining ingredients in frying pan. Finally add diced tomatoes, wine and a pinch of black pepper. Stir and let sit a couple of minutes until it dries out a little bit.
Number of Servings: 6-8
Notes from the Cook: If fish is still too salty, after boiling 15-20 minutes, you may repeat the rinsing process once more. If fresh cod fish is used, salt needs to be added to recipe, to taste.
