This quiche is great for a special occasion or just any old Saturday morning. The Swiss cheese and crab add the perfect flavor combination.
Line a pastry shell with a double thickness of heavy duty foil. Bake at 450 degrees for 5 minutes. Remove foil and bake an additional 5 minutes. Immediately sprinkle 1/2 cup cheese over crust. Reduce oven temperature to 375 degrees. In a skillet, saute red pepper and onions in butter until tender. In a large bowl, whisk eggs, cream, salt and pepper. Stir in crab meat and red pepper mixture. Pour into crust and bake at 375 degrees 30-35 minutes or until set. Let stand 15 minutes before serving.
