Micheal's Mexican Meatloaf

Tortilla chips, taco seasoning and salsa are added to the ground beef to make a Mexican meatloaf that can't be beat. Serve with sour cream for the perfect finish.

Ingredients:

• 2-3 lbs hamburger
• 2-3 cups crushed tortilla chips
• 4 tbsp salsa, hot or mild
• 1 pkg taco seasoning
• 2 eggs
• 1/2 cup sour cream, optional
• 1 pkg shredded cheddar cheese

Directions:

Mix all of the ingredients except sour cream and cheddar cheese. Place in a loaf pan or larger pan. Bake at 350 degrees for 30-45 minutes. Remove from oven and top with cheddar cheese to taste. Place back in oven until cheese has melted. Serve with a dollop of sour cream.
