Crisp Cookies

Add bright fruit flavor to sugar cookies with a package of flavored gelatin.

Ingredients:

• 1/2 cup shortening
• 1/4 cup butter
• 1/4 cup sugar
• 1 3 oz package flavored gelatin
• 2 eggs
• 1 teaspoon vanilla
• 2 1/2 cups flour
• 1 teaspoon baking powder
• 1 teaspoon salt

Directions:

Preheat oven to 400 degrees. Cream together shortening, butter, sugar and gelatin. Add 2 eggs and vanilla then mix thoroughly. In a medium bowl, sift together flour, baking powder and salt. Gradually add to creamed mixture. Roll dough into 1 inch balls using a and place 3 inches apart on an ungreased cookie sheet. Flatten each with the bottom of a glass dipped in sugar. Bake 6-8 minutes until lightly browned. Let cool 2-3 minutes, then transfer to a wire rack to finish cooling.

Notes from the Cook: I used many types and flavors of flavored gelatin for this recipe. My boys enjoyed the orange flavored cookies the best.
