This dish makes a great start to most any meal. The basil really compliments the tomato and mozzarella but the real treat is the reduced balsamic vinegar.

Ingredients:

Directions:

Reduce balsamic vinegar slowly until it becomes a syrup the consistency of maple syrup. Place basil leaves on dish, place sliced mozzarrella on top of each leaf, and a slice of roasted pepper on top. Place a slice of cherry tomato on top and drizzle balsamic vinegar over top.

Number of Servings: 8 leaves per person

Notes from the Cook: You may make the reduced balsamic vinegar earlier and keep refrigerated.
