Edamame are the seeds of fresh soybeans. This simple dip is a great way to add more soy to your diet.

Microwave edamame in a covered microwave safe bowl 2-3 minutes. Place all ingredients in a food processor and puree until smooth. Taste and add salt to taste. Serve with assorted dippers; raw vegetables, pita crisps, assorted chips, etc.

Notes from the Cook: Doubles easily for larger groups. I served this at our last football party and everybody loved it. Edamame are green soy beans and are available in the frozen section of many supermarkets and natural food stores.
