Chipotle peppers spice up sirloin burgers served on mini-buns with a lime and chipotle flavored mayo.

Chipotle Mayonnaise: Combine mayonnaise, chipotle pepper, adobo sauce and lime juice in a food processor then puree until smooth. Stir in lime zest, salt and pepper. Cover and place in refrigerator. Mini Burgers: Combine sirloin, chipotle peppers, onion and cumin. Shape into ten 5 inch patties. Preheat grill pan over medium high heat. Place burgers on grill and cook 2-3 minutes on each side for medium doneness. When almost done, place cheese or burgers and cover, then cook until cheese has melted. Place burgers on mini rolls and serve with chipotle mayonnaise, and burger bar fixings.

Notes from the Cook: Any small dinner roll works well but, I love to serve mine with Hawaiian sweet rolls.
