A healthy one dish meal--chicken, broccoli, corn, rice and cheese topped with buttermilk biscuits.
Preheat oven to 350 degrees. Season chicken with salt, pepper and garlic powder to taste, then place on a baking sheet. Bake until cooked through, 20-25 minutes. Meanwhile, cook rice by placing water and rice in a pot and bring to a boil. Cover pot, reduce to low heat, and simmer 20-25 minutes or until rice is tender. When chicken is done, cut into bite sized pieces. Add 2 cups cheddar cheese to rice mixture. Add chicken, broccoli and corn to rice. Add enough milk to make mixture creamy. Pour mixture into an oven proof dish sprayed with non stick spray or rubbed with butter. Bake 20 minutes then remove rice bake. Open biscuits and place on top of rice bake. It may be necessary to overlap to cover the entire dish. Return to oven for an additional 13-18 minutes, until biscuits have risen and are golden brown. Let dish sit 5 minutes before serving.
