A luscious vanilla cheesecake with a graham cracker crust and a creamy chocolate topping.
Preheat oven to 350 degrees. Mix first 3 ingredients and pack in a springform pan. Cook 8 minutes and set aside to cool. Beat cream cheese until smooth. Add sugar and vanilla, then blend well. Add eggs and blend again, then place in pan. Bake for 45 minutes and let cool in fridge for 8 hours. Chocolate Topping: Melt butter in pan and add semisweet chocolate. Stir until melted, add heavy cream, sugar and cocoa. Cook 2 minutes, add a dash of vanilla, and remove from heat. Pour chocolate over cheese cake.
