Cream of chicken soup, chicken and beef broths, and beer are used in this soup, along with carrots, celery, potatoes, green onion and cheddar cheese.

In soup pot, cook green onions in butter until softened. Add remaining ingredients, except cheese, and simmer 1 hour. Stir in cheese just until melted.

Number of Servings: 4-6

Notes from the Cook: Serve with warm bread and butter.
