This is sure to be the kids' favorite dish at Thanksgiving. Half and half really finishes this dish off nicely.
Using a fork, prick each sweet potato 2 times on each side. Cook on high in microwave about 6 minutes until very tender. Remove skin from cooked potatoes and mash. In four ramekins, or individual ovenproof bowls, evenly divide potatoes. In each ramekin, place 1 tbsp butter, 1 tsp brown sugar, and 1 tbsp nuts. Sprinkle each cup with cinnamon and nutmeg. Cover with foil and cook in preheated oven at least 15 minutes. Drizzle each cup with 1/2 tsp half and half just prior to serving.
