Start Halloween with these healthy pumpkin and whole wheat waffles topped with peanut butter, honey and bananas.

Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl. In a second bowl, add eggs, sugar, pumpkin, milk, and butter then beat well. Gently fold in flour mixture. Cook according to waffle iron instructions. Cream together peanut butter and honey until mixed, then spread over waffles. Place banana slices on top and sprinkle with confectioner's sugar.

Number of Servings: 6-8

Notes from the Cook: The kids love this for our Halloween Breakfast. You can substitue any fruit you like--tastes great with diced apples, too. I have a large pumpkin shaped cookie cutter that I use after the waffles are cooked.
