Chocolate chips are melted with butter and stirred into cooked egg yolks with whipping cream to form the basis for this rich, melt-in-the-mouth candy.
Melt chocolate pieces and butter over a pot of simmering water. Bring cream to a simmer; pour into beaten egg yolks. Cook and stir just until slightly thickened. Gradually pour the cream into the melted chocolate. Mix well, then refrigerate until firm. Using a small ice cream scoop, scoop truffles and lay on waxed paper. Roll in cocoa powder; cover and refrigerate until serving time.
