A tasty vegetarian meal--burgers made with black beans and jalapeno, then topped with queso fresco cheese and an avocado-lime mayonnaise.
Prepare avocado-lime mayonnaise by mixing avocado, mayonnaise, onion powder, lime zest, lime juice and cilantro in a medium bowl. In a food processor, or using a potato masher, mash half of black beans. In a large bowl, add mashed beans, onion, red pepper, green chilies, jalapeno, garlic, cilantro, breadcrumbs, salt, pepper and cumin. Mix until well combined. Add remaining whole beans and gently fold into mixture. Shape bean mixture into two 4 inch patties, using moistened hands to prevent sticking. Dredge patties in flour. Heat 1/2 inch of oil in a medium skillet over medium high heat. Add patties and fry until golden brown. Remove to paper towels to drain. Spread avocado-lime mayonnaise on both sides of sesame seed buns. Assemble burger with black bean cake, crumbled queso fresco cheese, avocado slices, diced jalapenos, cilantro, onion, tomato, lettuce or any other burger toppings.
