Frozen breaded okra cuts the prep time for this simple vegetable side dish.
In a large saute pan, heat oils over medium heat until smoking, 2-3 minutes. Add okra and season with salt and pepper. Cook 5-7 minutes, stirring only once before adding onion. Add onion and cook 3 minutes. Add tomotoes, stir to combine, and cook 30 minutes or until okra is crisp and browned. Using a spatula, turn every 7-8 minutes to help form a crust.
