Salmon is breaded with pecans and Parmesan cheese, then sauteed and served on a bed of greens.
Mix together pecans, bread crumbs, salt, pepper and Parmesan cheese. Mix separately, milk and lemon juice. Soak salmon in milk and lemon juice mixture. Roll salmon pieces in bread crumb mixture. Heat butter and olive oil. Place salmon in a heated pan with a little olive oil; brown on all four sides. Place on top of mixed field greens and serve with honey mustard. Garnish with whole pecans.
