This is a great side dish for grilled fish or shrimp.
Start with 2 cups of cooked rice, cool and put aside. Juice the limes and set aside. Dice the avocados and add half of the lime juice setting aside. Place the rest of the lime juice in a medium bowl. Combine the mango, tomatoes, onion, jalapeno pepper, carrot, and season/garlic salt in the bowl. After mixing, strain off juice to a sauce pan and bring to a simmer on the stove. Add enough of the cornstarch-water mixture to thicken. Allow to cool and add ingredients to thicken sauce mixing well. Stir in the rice. Adjust the seasoning before adding the remaining lime juice and avocados.
