This chicken dish is seasoned with fresh garlic and basil. The addition of spinach and eggplant makes this a great dish for any occasion.
In a large skillet, heat olive oil. Add garlic making sure not to burn it. Add eggplant. As it starts to soften, add chicken. Cover and let simmer for about 15 minutes. Add defrosted spinach and basil, and then stir. Cook another 15-20 minutes, making sure spinach keeps its bright green color.
