These mini-pizzas use slices of Canadian bacon for the "crust," topped with sauce, pepperoni and mozzarella. Serve them for appetizers or main dish.
Mix sauce in bowl by combining tomato paste, salt, oregano, sugar or Splenda, and enough water to make a sauce consistency. Next chop pepperoni into chunks. Then arrange Canadian bacon on baking sheets, spread about two teaspoons of sauce on top of each slice of Canadian bacon, top with mozzarella and pepperoni. Bake at 400 degrees about 8 to 10 minutes or until cheese is bubbly and slightly browned.
Number of Servings: 5-6 as appetizer; 2-3 as main dish
Notes from the Cook: Using Splenda rather than sugar will add to the low-carb aspect of these treats; these mini pizzas will satisfy that "pizza urge" while staying low-carb.
