Walnuts and dates compliment these pumpkin muffins nicely.

Ingredients:

Directions:

Mix wet ingredients on medium speed until well mixed. Sift dry ingredients together until well mixed. With mixer set on medium speed, add dry ingredients to wet ingredients until well mixed together. By hand, mix in 1/2 cup chopped walnuts and 1/2 cup chopped dates. Lightly oil muffin pans and spoon ingredients into muffin molds, filling molds 3/4 full. Bake in 350 degree oven for 35 minutes or until toothpick inserted in middle of muffin comes out clean.
