These muffins look spectacular on a plate with a scoop of ice cream.
Chop up peaches and divide evenly into greased muffin pans. Spoon about 1 teaspoon butter into each then sprinkle evenly with brown sugar. In a mixing bowl, stir together flour, baking powder, granulated sugar and salt. Beat egg, add milk and remaining butter. Add liquid mixture to flour mixture stirring well. Spoon out batter onto peaches. Bake at 400 degrees for about 30 minutes or until golden brown. Turn muffins out of pan and serve upside down.
