These banana nut muffins are very low maintenance and great to have around for any occasion.
Preheat the oven to 350 degrees. Put muffin cups in muffin tins, and mix the bananas and eggs together in a large bowl. Stir in the flour, sugar, salt, and baking soda. Add the walnuts and blend. Cook around 12 to 15 minutes or until firm to the touch. Remove from the muffin tin and cool till warm.
Number of Servings: 24 muffins
Notes from the Cook: I like to mash my bananas with my electric mixer, it leaves no lumps and I feel that it gives a better texture to the muffins.
