Pork tenderloin roasts are filled with a mixture of bacon, cream cheese, spinach and onion soup mix, then wrapped in bacon and roasted.

Preheat oven to 350 degrees. Cut 3 slices of bacon into thin strips and fry until crisp. Mix cream cheese with soup mix, bacon and spinach. Cut tenderloin in half lengthwise, but not all the way through. Spoon in cream cheese mixture and close wrapping outside of loin, with 3 slices of bacon for each loin. Place on cookie sheet and cover with foil. Place in oven for 30 minutes then uncover and cook another 30 minutes or until internal temperature reaches 170 degrees. Slice and serve.

Notes from the Cook: Can use cilantro instead of spinach, or both.
