A savory mix of seasonings is used to marinate a large pork roast which is then slow roasted until juicy and tender.
Combine all seasoning ingredients until it turns to a paste like consistency and set aside. Make penny size holes on both sides of roast. Stuff seasoning paste into holes (you may have to use your finger to fill holes). Cover roast with foil and let marinate overnight. Cook roast in oven on bottom rack for 6 hours at 250 degrees.
Number of Servings: 4 to 5 servings
Notes from the Cook: Check roast before 6 hours are up as all ovens do not cook the same.
