Chicken breasts are marinated in Italian dressing, grilled then mixed with greens, honey roasted pecans, red onion and cucumbers.
Clean and separate full chicken breasts in to halves. Marinate chicken in Italian dressing for about 15 minutes. Lightly season both sides of chicken with meat tenderizer and seasoning salt. Season both sides generously with lemon pepper seasoning. Cook thoroughly on grill over medium heat. Meanwhile combine lettuce, red onion, cucumber, and pecans together in a large bowl and set aside. After chicken is done, dice and put directly into salad while still hot.
Number of Servings: 4-5 servings
Notes from the Cook: Because of the honey roasted pecans there is really no need for dressing, as they add a rich flavor to the salad, but you may add your own dressing of choice.
