Pizzelle

A light lemon flavored cookie that bakes up thin and crisp on a pizzelle iron.

Ingredients:

• 1 stick butter, melted and cooled
• 1/2 cup sugar
• 1 teaspoon vanilla
• 1 tablespoon lemon flavoring
• 2 eggs
• 1 cup flour
• 1 teaspoon baking powder
• Powdered sugar

Directions:

Add sugar, vanilla, lemon flavoring, eggs, flour, and baking powder to butter and mix thoroughly. Put one spoonful of mixture onto each side of pizzelle iron; let cook and then cool. Sprinkle powdered sugar on top and serve.
