Salt pork and liquid smoke give these beans a great flavor that is undeniable.

Rinse beans with cold water. Bring beans to a rolling boil in medium pot for 2 minutes. Drain beans and rinse with cold water again. Place beans in pot with 8 cups of cold water and salt pork. Bring beans to boil at high heat. Reduce heat to medium, cover and simmer for about one hour or until beans start to cook down. Add remaining ingredients except salt. Add water as needed. I like these beans thick. After beans are tender add salt to taste and continue to cook until desired tenderness and thickness of beans has been achieved.
