This colorful salsa combines mango (or peaches) with canned pineapple, peppers, red & green onion, cilantro & lime juice.
Drain pineapple thoroughly. Chop all ingredients and mix well. Drizzle lime juice over salsa and mix a bit more. Serve with tortilla chips OR use as a zesty and refreshing condiment for fish, chicken or pork.
Number of Servings: 10-12
Notes from the Cook: If you can't get mangoes, fresh peaches will substitute well. This was a big favorite at our town's First Annual Salsa Festival in September of 2006. It's addicting!
