This fried pork is so easy everyone will want "mamma's" recipe.
Cut pork loin into 1 inch thick slices. Place pork on cutting board and pound to about 1/2 inch thick or a little thinner. Put eggs, milk, salt, pepper, paprika, and parsley flakes in a bowl and beat. Put meat in the mixture refrigerate overnight. Crush saltines to a fine texture. Roll meat in crackers. Fry in margarine around 10 minutes per side on medium heat until there is no pink in center.
Number of Servings: Makes eight to ten pieces.
Notes from the Cook: Outsides should be brown and crispy.
