Chicken breasts are marinated in lime juice with poultry seasoning & other flavors, then grilled, sliced & served with sweet pepper strips in tortillas.

Squeeze juice from 5 of the limes and reserve the sixth one for later. Mix together lime juice, paprika, cayenne pepper, poultry seasoning, and cumin. Add chicken breasts to marinade. Let sit at least 15 minutes. (May marinade up to 4 hours in refrigerator.) Remove from marinade. Cook on preheated grill until chicken is done. Grill red peppers, skin side down, at the same time until blackened. Peel off cooked skin and slice peppers into strips. Slice the cooked chicken and squeeze fresh lime juice from the reserved lime over it. Build the fajita using chicken, roasted peppers, salsa verde, and sour cream on warmed tortillas. (They can be warmed in the microwave or on the warm grill.)

Number of Servings: makes 6 -8 fajitas

Notes from the Cook: This is a very low fat, high taste recipe I invented. My family eats it once a week. Goes well with corn on the cob or beans and rice.
