Try this healthy and vegetarian alternative to your usual burger. It even cooks on the grill.
Place balsamic vinegar, olive oil, salt, pepper and Portobello mushroom caps in large sealable bag, make sure caps are completely coated in marinade. Seal bag and place in refrigerator for at least thirty minutes but can be several hours or overnight. Heat grill to medium, once entire grill is heated, drain marinade from mushrooms and place mushroom caps on grill. Allow to cook for approximately five minutes on each side, less if mushroom are getting overdone. Remove from grill and then finish assembling burger. Place one mushroom cap on each bun, top with a slice of Swiss cheese, a pineapple ring and then ½ cup spring mix greens. Top with other half bun, and slice in half.

Notes from the Cook: This combination tastes great and if you have someone in the house that absolutely must have meat, add a hamburger and you have one stacked tasty hamburger. This is a fabulous Portobello burger that the whole family will love.
