Cornish hen is stuffed with cooked brown rice, brushed with sweet orange syrup and topped with thin pieces of sweet red pepper & oranges.

Cook brown rice in the chicken stock until tender. Salt and pepper chicken cavity. Stuff chicken with rice. Place on rack in shallow baking pan. Bake in oven at 375 degrees for 15 minutes. Reduce heat and continue baking about 1 hour at 350 degrees. While chicken is baking, in a saucepan combine sugar, orange juice, water, oranges and red sweet pepper. Cook, uncovered until thickened for about 20 minutes. After an hour of baking the chicken, baste with orange mixture. Place oranges and sweet peppers on top of chicken. Continue baking until internal temperature is 185 degrees. The top of chickens will have a brown shiny crust.

Number of Servings: 1 hen per person

Notes from the Cook: Serve each on a crystal plate with a green vegetable. Your friends will feel like royalty. The crystal plate will make you feel special, if you are eating alone.
