This beef brisket is melt-in-your-mouth tender. Just cook on low for 3-4 hours, slice and enjoy.

Line roasting pan with foil with large enough pieces of foil to overhang. Place meat on foil. Mix together all other ingredients in a jug, adding the Coca Cola or ginger ale last, and pour over brisket. Cover with overhanging foil. Cook slowly to 150 degrees, 3-4 hours in oven. Allow to cool and slice thinly. Put back in cooking juices and keep warm. Add a bit of water if sauce too thick.

Number of Servings: 4 - 6

Notes from the Cook: Serve with rice and a green salad. You could add cut up apricots or prunes to the rice.
