A rich spinach, cheese and egg quiche without the guilt--you'll never miss the fat.
Preheat oven to 375 degrees. Whisk together first four ingredients. Add in onion, cheese and spinach and whisk until combined. Pour mixture into pie crust and bake 45 min to 1 hour, or until the top is golden brown.

Notes from the Cook: I find Land O' Lakes fat free half and half and Hellman's reduced fat mayo works best (do not use the Just 2 Good mayo).
