This creamy rich side dish combines frozen whole kernel corn, diced bacon, onion & garlic with a whipping cream-chicken broth-butter sauce.
In a large skillet on medium-high heat, saute bacon pieces in olive oil until browned. Add onion and garlic and cook until soft, about 2 minutes. Add corn and saute about 5 minutes. Add chicken broth and heavy cream. Bring just to a boil, then turn the heat down to med-low and simmer until thickened, about 15-20 minutes. Add butter and stir until melted. Sprinkle with salt and pepper to taste.
