Canned green beans are cooked with diced smoked sausage, onions and bell peppers, seasoned with crab boil, and "smothered" with cheddar cheese.
Heat a large skillet on medium-high heat; add the first five ingredents and cover. Cook for 30 minutes, stirring occasionally. Season with crab boil and a little salt, to taste. Pour the green bean mixture into a baking dish with two to three inch high sides. Cover the green beans with the cheese and bake in a 350 degree oven until the cheese is melted.

Notes from the Cook: Liquid crab boil is traditionally used in the south for boiling seafood, but it is also a great seasoning. It is best used in small amounts, as it is a very concentrated seasoning. We use this recipe for a change from the regular green bean casseroles.
