This healthy pumpkin quick bread contains no fat and uses artificial sweetener instead of sugar. It has both flour and rolled oats, and spices for flavor.
Preheat oven to 325 degrees. Spray a medium sized bread pan with cooking spray. In a large bowl, combine dry ingrediants (flour through nutmeg). Add applesauce, egg substitute, and pumpkin and mix until just combined. Pour into bread pan and bake for 40 minutes or until a toothpick comes out clean.

Notes from the Cook: When using sugar subtitute, baking time and temperature is less than normal. If using regular sugar, increase temperature to 350 degrees or bake longer.
