Portabello mushrooms with a marinara sauce and mozzarella cheese-makes a great main dish or cut into smaller appetizer sized portions.
Sautee the mushrooms until slightly soft in a skillet. Spread spaghetti sauce on one of the mushrooms, then cover with a slice of mozzarella cheese. Sprinkle with sage, salt, and pepper to taste, then top with the other mushroom. Place the sandwich in a skillet on medium heat, then place another skillet on top to weight down the sandwich. Cook each side for approximately one minute.
