This healthy loaf is made with 100% whole wheat flour. Apple juice and walnuts give the bread an interesting flavor.

In a glass measuring cup, combine warm water, apple juice, and yeast. Let the yeast begin to activate and foam (about 5 minutes). Put the metal blade in your food processor, then add the yeast mixture and remaining ingredients. Pulse until combined. If it is too crumbly, add 1 tbsp water. If it is soupy, add 1 tbsp flour. Process until the dough forms a ball and cleans the side of the bowl. Oil a large bowl and place the dough in it. Cover and allow to rest until doubled, about 90 minutes. Punch down the dough and place in a loaf pan. Allow to rise until it reaches the top of the pan, about 60 minutes. Bake 375 degrees for about an hour, or until the bread sounds hollow when tapped. Cool before cutting.

Notes from the Cook: So often 'whole wheat' breads use white flour. I like the idea of using all whole wheat to make it healthier.
