A healthy stir fy made with a colorful assortment of vegetables and tofu in sauce made with garlic, soy and peanuts.

Cut the tofu into 1/2 inch pieces and drain with blotting paper. In a non-stick pan add 1/2 tsp oil. Add garlic paste, peanuts and tofu and saute for 1-2 minutes on high-medium flame. Then add veggies and 2-3 tbsp soy sauce and stir for 5-6 minutes briskly on high-medium flame. Add salt and cayenne pepper and mix well. Add a few sprinkles of water if needed. Squeeze 1/4 lemon.

Notes from the Cook: 1. This is dry stir fry. If gravy is desired, add 1/4 cup coconut milk. 2. This should be served steaming hot over white or brown rice. 3. This is a very healthy vegan recipe ideal for family gatherings, parties or just for a special dinner. Total time: 15-20 minutes.
