Homemade pancakes that will get your family out of bed and running for the breakfast table.
Preheat waffle maker or griddle while preparing batter. In medium bowl, sift flour, then add milk, sugar, and cinnamon. Add water, oil, and beaten egg and mix thoroughly. Add more water if needed for desired consistency. Pour approximately 1/2 cup of batter onto the waffle maker and cook 3 or 4 minutes, until brown. For pancakes, pour 1/2 cup of batter on pancake griddle, cook until bubbles form on top and bottom is slightly browned, Turn it over and cook 2 or 3 minutes longer. Serve immediately with butter and syrup.

Notes from the Cook: Mixture is perfect for pancakes or waffles. Substitute buttermilk for nonfat dry milk and water, if desired. Lily self-rising flour can be found on the internet if not available in your local stores.
