Finely ground walnuts or pecans are combined with brown sugar Splenda, spice, rum extract and egg whites in these flour-free cookies.

Process nuts in a food processor until finely ground. Mix with Splenda and spice. Beat egg whites and flavoring until stiff. Fold in ground nut mixture. Roll into balls; place on cookie sheet that has been sprayed with butter-flavored cooking spray. Bake about 15 minutes at 350 degrees F.
