Rich whipping cream and cheddar cheese are used in this quiche, which is seasoned with dry mustard, Worcestershire and Tabasco. Cooked chopped bacon and caramelized sweet onion slices are spooned over the top of the quiche.

Ingredients:

Directions:

Preheat oven to 375 degrees; butter bottom and sides of a 9" pie pan. Place eggs, cream, milk, dry mustard, Worcestershire and Tabasco sauce in a bowl and beat with beaters or whisk until well blended. Fold in salt, pepper and cheese and pour into prepared pan. Take a baking dish that is bigger than the pie plate and pour water into 1" depth in pan. Place pie pan in center of dish, being careful not to get any water into the quiche. Place in oven; bake for 45 minutes. Quiche should be firm and slightly golden. Remove the pan from the oven and lift the pie pan out of center and place on rack. Meanwhile chop bacon and place in skillet; cook and stir for four minutes; stir in the 1 1/2 tsp. pepper and cook and stir until bacon is crisp and completely cooked. Remove bacon from skillet with slotted spoon and place on paper towels to drain; keep warm. Add sweet onion slices to skillet and cook and stir for 10 minutes. Add brown sugar to skillet and cook and stir for two minutes. To serve, spoon bacon and onion mixture evenly over surface of quiche, slice and serve.

Notes from the Cook: Peppered bacon and caramelized onions are a nice topping to a moist cheddar quiche.
