English muffin halves are spread with garlic and herb-flavored cream cheese, sprinkled with crumbled turkey bacon, and topped with poached egg in this healthy breakfast recipe for 1 or 2.

Fill a small saucepan with water and place on burner. Place eggs in poacher; place in pan for poaching. Split the muffin in two and toast. Place bacon inside a paper towel and microwave for approximately one minute or until desired crispness. When muffin is toasted, divide the cream cheese and spread over muffin halves. Crumble the cooked bacon onto the muffin. When the eggs are finished poaching, remove from poacher and place onto muffin in an over-easy fashion (flipped over) and serve.

Number of Servings: 1 or 2

Notes from the Cook: I call this a healthy alternative to Eggs Benedict. It's a little messy to eat, but well worth it! As an alternative to using your hands, if you wish to eat it with a knife and fork, toast the muffin a little less so that it cuts more easily.
